Ingredients:
4 boneless skinless chicken breasts
1/4 cup lime juice (can use fresh vs. bottled concentrate)
2 tablespoons vegetable oil
1/2 tsp. ground cayenne red pepper
6 cloves garlic (some use garlic powder)
1 whole chopped sweet red pepper
1/2 sliced purple onion
1/2 cup orange juice
1 cup canned black beans-rinsed
2 tablespoons balsamic vinegar
1/4 tsp. salt
1/8 tsp. black pepper (fresh ground if available)
1 clove garlic minced
Marinade: (Also Great! on Flank Steak, you simply need to double the lime juice and veg oil)
Combine lime juice, ground cayenne red pepper, veg oil and 6 cloves minced garlic in plastic bag and add
chicken to marinate for at least one hour.
Sauce:
Combine sweet red pepper and onion in a 9' microwave safe plate; cover with wax paper; microwave on high for 1 minute or until slightly tender. (We do this instead of sweating the pepper/onion because we want them soft for the upcoming food processor)
Get your food processor ready; add rinsed black beans and remaining ingredients and process until
smooth; Add onions and red peppers and process until lumpy but consistent.
Pour black bean mixture into saucepan and heat to desired temp; at this point I usually add additional seasoning to taste-possibly more balsamic vinegar and slightly more orange juice ? more garlic ?salt/pepper.....adjust to your liking.
Remove chicken from marinade and grill or broil in the oven until fully cooked.
Serve chicken with the black bean sauce on top. Yum!
