Summer Appetizer
Ingredients: 16 oz Plain Yogurt 4 oz Sour Cream 2 Cucumbers 3 cloves of garlic 1 lemon (will only need half) 2 tbsp. Dill (fresh) Salt and Pepper to Taste Necessary Equipment: Food Processor Cheese Cloth Large Bowl Mixing Spoon Cup Strainer Saran Wrap Directions: Start by cutting both ends off of the 2 cucumbers. Then peel the skin off only leaving small strips behind. Picture #1 (Note: You don't want to leave the skin on as this makes the sauce hard to eat) Next, quarter each cucumber and remove the seeds. You should wind up with your cucumbers looking like the second picture. Once at this point, you can chop you cucumber into small cubes and place them in your food processor. (Note: depending on the size of your processor, you may need to run multiple batches) Pulse until you have your cucumber in a pulp. If you would like your sauce to be a bit more "chunky" then simply stop pulsing when you have reached your desired consistency. Place all of the cucumber pulp into cheese cloth and drain off the water/juice. Add your cucumber to your large bowl. Cut approximately 2 tbsp. of fresh dill very fine and add to the large bowl. Finely dice your garlic cloves and add that to the large bowl mixture. At this point you should be looking like Picture #3. Now you can cut your lemon in half and squeeze the juice of half a lemon through the strainer and into the cup. Basically...we don't want the seeds in our sauce. Add the juice to your large bowl mixture. Add your plain yogurt and sour cream to the large bowl, along with a pinch of salt and a pinch of pepper. Stir the sauce thoroughly. Technically, you could use the sauce at this point. Ideally however... this should set for 1-6 hours in the refrigerator. Simply cover your bowl with saran wrap and wait for this tasty treat to transform. You can dip vegetables in this sauce, but my favorite is to take pitas and melt mozzarella cheese. cut the pita as you would a pizza and dip the cheese covered wedges in the tzatziki sauce.
